Ingredients
  

  • 500 g lean ground beef
  • 1 large onion finely chopped
  • 2 cloves garlic minced
  • 1 red bell pepper diced
  • 200 g long-grain white rice
  • 400 g can chopped tomatoes
  • 600 ml beef stock hot
  • 2 tablespoons tomato purée
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 150 g mature cheddar cheese grated
  • 2 tablespoons olive oil
  • Small bunch fresh parsley chopped (for garnish)

Method
 

  1. Preheat and Prepare: Set your oven to 180°C (160°C fan)/Gas Mark 4. Grease your 9x13 inch baking dish lightly with a little oil. The dish should feel warm to the touch as the oven heats.
  2. Brown the Beef: Heat the olive oil in a large frying pan over a medium-high heat. Add the ground beef. Listen for that satisfying sizzle as it hits the pan. Cook, breaking it up with a wooden spoon, until it's no longer pink and has taken on a deep, rich brown colour. This should take about 6-8 minutes. The smell will be deeply savoury. Drain off any excess fat.
  3. Sweat the Vegetables: Add the chopped onion, diced red pepper, and minced garlic to the pan with the beef. Reduce the heat to medium. Stir and cook for 5 minutes, until the onion turns translucent and the pepper softens. You'll notice the aroma shift from pure meat to a sweeter, more complex fragrance.
  4. Toast the Rice: Sprinkle the dry rice over the beef and vegetables. Stir everything together for 1-2 minutes. The rice will start to look slightly opaque at the edges and you'll hear a faint crackling sound. This step is crucial for a nutty flavour and helps the rice stay separate during baking.
  5. Build the Sauce: Stir in the tomato purée, smoked paprika, oregano, salt, and black pepper. Cook for another minute until the purée darkens a shade and smells richly aromatic. Pour in the chopped tomatoes and the hot beef stock. Stir well, scraping up any browned bits from the bottom of the pan. The liquid should be a deep, rusty red and smell wonderfully herby.
  6. Assemble and Bake: Pour the entire mixture into your prepared baking dish. Spread it into an even layer. Cover tightly with aluminium foil. Bake for 30 minutes. After 30 minutes, carefully remove the foil—watch out for the steam—and sprinkle the grated cheddar cheese evenly over the top. Return the dish to the oven, uncovered, for another 15 minutes. The top should be bubbling and golden brown, with the cheese melted into a lovely, crispy crust.
  7. Rest and Serve: Remove the casserole from the oven and let it rest on a wire rack for a full 10 minutes. This is perhaps the hardest part, but it's essential. The resting time allows the rice to absorb the last of the liquid and the casserole to set so it slices cleanly. Garnish with fresh parsley before serving. The first spoonful will be wonderfully creamy and full of texture.
