Method
- Get the rice going. Rinse the brown rice under cold water until the water runs clear. Place it in a saucepan with 600ml of water and a generous pinch of salt. Bring to a boil, then reduce the heat to a low simmer, cover, and cook for 30-35 minutes. You'll know it's ready when the grains are tender but still have a pleasant bite, and the water has been fully absorbed. The smell will be nutty and wholesome. Drain any excess water if needed and set aside.
- Roast the vegetables. While the rice cooks, preheat your oven to 200°C (180°C fan). On a large baking tray, toss the diced aubergine, courgettes, red and yellow peppers, and red onion wedges with 2 tablespoons of olive oil, the dried oregano, smoked paprika, and a good seasoning of salt and pepper. Spread them in a single, even layer — do not crowd them. Roast for 25-30 minutes, stirring halfway through. You are looking for the edges to be charred and the vegetables to have softened and released their moisture. The kitchen will smell sweet and smoky.
- Build the sauce base. In a large mixing bowl, combine the cooked brown rice, the tin of chopped tomatoes, the drained chickpeas, and the minced garlic. Stir everything together until the rice is evenly coated in the tomato sauce. The mixture should look vibrant and chunky, with the rice absorbing the red colour.
- Combine rice and roasted veg. Once the vegetables are beautifully roasted and have cooled for just a minute or two, tip them into the bowl with the rice and tomato mixture. Fold everything together gently but thoroughly. You want the charred bits of aubergine and the sweet peppers to be evenly distributed throughout the rice. The aroma at this stage is incredible — rich, earthy, and just a little bit smoky.
- Assemble the casserole. Transfer the entire mixture into a 23x33cm baking dish, spreading it out into an even layer. Sprinkle the grated cheddar and Parmesan cheeses over the top, covering the surface completely. The contrasting colours of the white Parmesan and the orange cheddar will look very inviting.
- Bake to golden perfection. Place the dish in the oven, uncovered, and bake for 25-30 minutes. You'll know it's done when the cheese is bubbling vigorously and has turned a deep, golden brown in patches. The edges of the casserole should be just starting to pull away from the sides of the dish. The sound of it bubbling as you pull it from the oven is pure comfort.
- The crucial rest. This is the step you must not skip. Let the casserole rest on the counter for a full 10 minutes before serving. During this time, the juices redistribute and the casserole sets, making it much easier to slice and serve cleanly. The final dish should be firm, glossy, and steaming gently.
Notes
For best results, let the casserole rest for 10 minutes before serving to allow it to set. You can substitute the cheeses with your favorite melting cheese.
